I was pumped to find Toasted Oat Bran at Trader Joe’s. I’ve always been a huge fan of its creamy texture—kind of like Cream of Wheat meets Oatmeal. If you don’t live near a TJ’s, never fear, you’ll find it at most markets next to the oats.
It’s delish for breakfast—or even as a late night snack. And since it’s a Weight Watchers Power Food, it’s ZERO POINTS if you’re following the Simple Start or Simply Filling plans.
What is Oat Bran?
I was surprised to discover that Oatbran isn’t just the ‘husk’ of the oat, but is contained in the outer layer of the ‘groat’ which remains after the shelling process. (Confused? So was I!)

Here’s my version of the Oat Bran Recipe on the back of the Trader Joe’s container. They have a nuttier, denser texture than traditional blueberry muffins (a/k/a cake!). And they’re, of course, waaaaay better for you!

Blueberry Oat Bran Muffins
Ingredients
- 2 cups Trader Joe's Oat Bran uncooked
- ¼ cup firmly packed brown sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup fat free milk or 1 or 2%
- 2 egg whites lightly beaten
- 2 tablespoons canola or vegetable oil
- 3 tablespoons honey
- 1 cup fresh or frozen blueberries
Instructions
- Heat oven to 425 degrees F.
- Line 12 medium muffin cups with paper baking cups or spray bottoms only with no-stick cooking spray.
- Combine dry ingredients; mix well.
- Add combined milk, egg white, honey and oil; mix just until dry ingredients are moistened.
- Stir in blueberries.
- Fill prepared muffin cups full.
- Bake 14 - 16 minutes or until golden brown. Remove from pan immediately and transfer to a wire rack to cool completely.

Happy you liked them! Next time try them with a mashed banana. I’ve even made them with two bananas and left out the blueberries and sugar and they turned out great. If you use verrrry ripe bananas all you need is a touch of honey to sweeten them. Details coming soon!
Are these blueberry bran muffins a power food. I’m doing simply filling so I would like to know. I used your recipe and I like them.

Hi Phyllis, I’m glad you liked the muffins. If a recipe has ingredients in it that are not Power Foods (like sugar and honey in this one) then it isn’t a power food, so you’d have to count the 3 PointsPlus values on the Simply Filling plan. Hope that helps. Try making them with two VERY ripe bananas, no sugar, and just 1 tablespoon of honey (or I’ve even made it with no added sweetener and they were still delish. I did sprinkle a bit of cinnamon sugar on top for sweetness though.) Or you could add a packet or two of splenda – just taste the batter before you bake it and add more as needed. (with or without blueberries) Remember to add less salt if you’re omitting the sugar. LMK how they turn out.
Orna, thank you immensely for this site! I am getting back on WW and am serious about losing this time. I went to Trader Joes today and bought several items you have suggested and I am trying them all. Just tried the Trader Joes wonderful spice–yum. Have to appear much lighter for a wedding in March, but will continue on and maintain. Sent your website to my daughter who is on the Simple Start but was a “lifer” on WW.
