Oven Fried Rice

I’m not usually a fan of canned mushrooms, but sometimes you need something super-easy that you can just dump, cook, stir, and serve!Oven Fried Rice in casserole dish

I recommend Brandywine mushrooms. 

Oven Fried Rice

Ingredients
  

  • 2 cups Uncle Ben's Original Parboiled Long Grain Rice
  • 1 package Lipton's Onion Soup Mix
  • 4 tablespoons soy sauce
  • ½ cup vegetable oil recommended: Crisco - I use less than half a cup
  • 1 regular or two small cans sliced mushrooms recommended: Brandywine
  • water

Instructions
 

  • Preheat oven to 350 degrees F.
  • Place rice and onion soup mix in a 2-quart casserole dish.
  • Drain mushrooms into a measuring cup; add enough water to the juice to make 3 cups of liquid. Add mushrooms, liquid, oil, and soy sauce to casserole dish; stir all ingredients very well.
  • Cover tightly and bake for 1 1/2 hours. (Do not remove lid before the time is up!)
  • The mushrooms will all come to the top. Leave the lid on till you're ready to serve; mix well and serve!

Notes

You can cook for one hour earlier in the day, keep covered, and then put back in the oven for a half hour together with your chicken or beef or whatever else you're cooking.
Delicious on day 2 or 3. Freezes well.

  1. Yum! My family always makes it this way and I was searching for the recipe without having to bug my mom for the millionth time! During the last half an hour of cooking we add a cup of frozen peas…so yummy. Making tonight.

    I am making this recipe again but for a larger crowd so, I will be using 4 cups of rice. Do I double the other ingredients? Would I use one or two onion pack?

    1. Hi Leyla, so glad you enjoyed it. I have never doubled it but I would probably use a little less water and oil but keep the seasoning the same – so yes, two packets of onion soup. Let me know how it turns out.

    1. Unfortunately I don’t think so because minute rice has been pre-cooked so it wouldn’t take the same amount of time. I’m going to look into it further and get back to you soon.

      1. Does the rice need to be par-boiled Orna or can it just be Uncle Ben’s 20 minute rice???

        1. I have only made it with Uncle Ben’s parboiled rice so I’m not sure how any other type will work with the amount of liquid and timing but let me know if you try it! (You could read the instructions for both types of rice online and modify accordingly) Hope that helps!

    1. Hi Deb – I’m so sorry I just realized I didn’t respond to this. I have never tried it with basmati rice and I’m guessing since it isn’t parboiled that might affect the cook time – sorry I can’t give you better advice. Let me know if you tried it.
